Woo Hoo...Hell Day is Over!

Hell Day a.k.a. Annual Membership Meeting is over. There is so much planning that goes into this event it is unbelieveable. Thank God Joanie and I both have a natural talent for planning events. Everything went well dispite the fact that we had half the man power we normaly have. It was a very sucessful day.

Funny story though...this just proves no matter how well you plan and no matter how many years you do an event things will happen.
Timeline:
January 2-Call sandwich company to order 750 ham and cheese poboys for January 30.
January 16-Confirm poboy order
January 25-Confirm poboy order again and delivery information
2:30 January 29-Phone call from sandwich company.
SC:What is the latest we can deliver your poboys?

AA:7:30 a.m. tomorrow morning.

SC:Well we only have enough bread for 200 sandwiches. Can we deliver later?

AA:No this order was placed 4 weeks ago and confirmed twice. They have to be here no later than 7:30 am

SC:OK we will see what we can do.

Now panic breaks out of the office. We are in a situation we have no control over. Forntuately the sandwiches did arrive on time the next morning. Yeah!

Sometimes you just get lucky...

I am no professional when it comes to taking pictures. I was sent on an assignment to take pictures around Pointe Coupee Parish for work. The pictures came out so good that they were used in the chamber of commerce brochure, a Baton Rouge Business Report advertisement and to decorate Pointe Coupee Electric's office. Plus I have to admit that I used some of these in black and white to decorate my house as well. Oh well sometimes you just get lucky. Here's a sample of a few. I will post more another day.

I never write a recipe down...

nor do I ever make the same dish twice. I have always had a problem following recipes. I get creative and have to change them around. Well I made a spinach dip and wrote down the recipe for the first time ever. The day of the LSU Championship game we had a company tailgate for lunch and I brought my spinach dip. Hope you enjoy.

Spinach Madeleine

2 tablespoons olive oil
Crushed red pepper flakes
4 tablespoons (1/2 stick) butter
Chopped seasoning (onion, garlic, bell pepper and celery)
2 tablespoons of all-purpose flour
½ or 1 cup of evaporated milk
2 packs of frozen chopped spinach
Chicken stock
¼ block of Velveeta cheese
Worcestershire Sauce
Hot Sauce
Salt
Black Pepper

In a sauce pan heat olive oil and sweat the crushed red pepper flakes to flavor the oil. Add the butter and sauté the seasoning. Make a white roux by adding the flour to the seasoning. Be sure to cook your flour. Slowly add the evaporated milk while stirring constantly to avoid lumps. Bring the mixture to a boil then add the spinach. Use the chicken stock to get the sauce to the right consistency. Add the cheese and the rest of the ingredients. Make adjustments according to taste.

Serving suggesting:
Dip with Tortilla Chips
Add chicken to the recipe and serve in puff pastry cups for an hors d’oeuvre
Florentine: Serve over grilled chicken or shrimp

How do you cheer for both teams to lose?

I have a dilemma. I hate Eli Manning and I hate cheaters, so how do you cheer for both Superbowl teams to lose?

Here's the deal. I will never forget watching Eli cry on national television because he was drafted by a team he did not want to be a part of. Here's the deal you prick, you have an opportunity that many dream about but never get. If you have so much talent then you should be able to take that to any team. But I guess it pays off to be a girl and cry to the national media and your daddy!

On the other hand you have a team of superstars that have egos the size of the east coast. You have all the talent money can buy but you have to resort to cheating. Come on people! Can anyone be honest in sports anymore or does every sporting event have to have a black eye?

Fortunately for me, Superbowl weekend is the same weekend as Mardi Gras weekend. I will have better things to occupy my time then watching a bunch of over paid pricks! I'll record the game for the commercials and skip the "go go may lay" (Mike that's for you)!

Tornado Strikes Down but We are All Fine

A tornado struck down at the end of Hospital Road in New Roads. No one was hurt and Mimi and Merle's homes are fine. The John Deere retailer at the end of Hospital Road was hit bad and we had a major transmission line that was taken out by the tornado. Thank God everyone is alright.
